DANDELION Taraxacum officinale is a cultivated strain with tender green leaves. It can be used as a green vegetable (like spinach) for boiling or in a salad. Its roots are a popular substitute for coffee by roasting in an oven until crisp and then grinding.
Grows to a height of 10 - 30cm.
Medicinally, dandelion has been used for many centuries to treat infections, liver and kidney ailments. It is also known as the first choice of food for bees.
