Sanguisorba minor

Salad Burnet is a perennial Mediterranean native with hardy tolerance. It is a member of the rose family and is used in soil erosion control, salad green, and for flavouring in vinegar's, sauces and soups.

The young leaves are edible, with a flavour similar to cucumber, and it also has medicinal properties. It grows as a clumping form with soft green leaves.  It tolerates drought and cold, and will grow to around 40cm in height before it flowers; flower heads can reach around 75cm in height, and are very attractive to beneficial insects such as butterflies.

Salad Burnet prefers a slightly alkaline soil, so adding a small amount of lime will help regulate this. Full sun or part shade, water well in hotter weather. It will grow all year around.  Sow seed approx. 4mm deep, in Spring - Autumn. Germination from 14 - 21 days. Maturity in approx. 70 days.
